Surrounded by a belt of rocks (coming\u00a0from the the vineyards) and covered with about 2 meters of ground, <strong>is projected to have temperature and humidity perfect for wine aging<\/strong>. The structure is <strong>simple<\/strong> and <strong>functional<\/strong>.\u00a0On the outside there is a canopy that runs along the front, the only part that is not\u00a0underground. Under it we do the &#8220;heavier&#8221; works, such as de-stemming, crushing,\u00a0pressing the grapes for example.<br class=\"\" \/><br class=\"\" \/>Inside there are four separate and distinct areas. The largest is dedicated to the<strong>\u00a0fermentation<\/strong> and <strong>storage<\/strong>. All tanks are stainless steel and thermo-controlled. The narrow\u00a0and long barrel room is positioned at the bottom, in the coldest part of the cellar. A special\u00a0room is dedicated to <strong>storage<\/strong> and\u00a0<strong>aging<\/strong> the bottled wines and another one as <strong>warehouse<\/strong>\u00a0and for the malolactic fermentation.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Completed in the spring of 2009, the winery is almost completely underground, taking\u00a0advantage of a natural depression already present.
